Zucchini Bread

Sunday I woke up in the mood to get things done!! After being on vacation all week there were a lot of things around the apartment that had been neglected... most importantly our fridge! So I decided to be the good housegf that I am and went grocery shopping. On the way there I stopped off at the a local produce market and saw that they had zucchini... the craving I'd been having for zucchini bread suddenly reappeared with vengeance. I bought 3 and as soon as I got home started baking.

Ingredients:
3 Eggs
1 cup Vegetable Oil
2 cups Sugar
2 cups Zucchini, grated and well drained [about 1-1 1/2 Zucchinis]
1 teaspoon Vanilla
3 cups Flour
1/2 teaspoon Salt
1/4 teaspoon Baking Powder
1 teaspoon Baking Soda
3/4 teaspoon Nutmeg
1 tablespoon Cinnamon
1/2 cup Raisins [optional, I didn't use them]

Directions:
1. Mix together eggs, oil, sugar, zucchini, and vanilla. Set aside.

2.Mix together flour, baking power, baking soda, salt, nutmeg, and cinnamon. Add to first mixture. Add raisins if desired.

3. Pour into 2 greased and floured loaf pans. Bake at 350 degrees for approximately 45-50 minutes or until the center springs back when touched.

  1. looks delicious!!! yummmmmmm It's nice in Maine cause now is the time all of the Farmers put their produce free beside the road when they've grown way too much!
