As I mentioned yesterday I want to pick one day of the week and dedicate it to food. I decide Thursday's will be that day. There are a few recipes that I'd really like to share but I'm going to start with my favorite: Shrimp Scampi. Jeremy and I made this Tuesday night and had a lot of good laughs in the process. He's a big fan of garlic... but really who eats whole cloves by themselves?? Personally, I like my garlic cooked.

This has got to be one of the easiest dishes to cook. I found this particular recipe on foodnetwork.com.

Ingredients:
  • 1 lb linguini
  • 4 tablespoons butter
  • 4 tablespoons extra-virgin olive oil
  • 2 shallots, finely diced
  • 2 cloves garlic, minced
  • pinch of red pepper flakes, optional
  • 1 lb shrimp, peeled and deveined
  • kosher salt and freshly ground black pepper
  • 1/2 cup dry white wine (plus the remainder of the bottle to drink with dinner!!)
  • juice of 1 lemon
  • 1/4 cup finely chopped parsley leaves

Directions:

For the pasta, follow the directions on the box.

Meanwhile, in a large skillet, melt two tablespoons butter in 2 tablespoons olive oil over medium-high heat. Saute the shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes.

Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes. Remove the shrimp from the pan; set aside and keep warm.

Add wine and lemon juice and bring to a boil. Add 2 tablespoons butter and 2 tablespoons oil. when the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta. Stir well and season with salt and pepper. Drizzle over a bit more olive oil and serve immediately.

Makes: 4ish Servings

And because pasta isn't complete without bread. I bought a loaf of french bread and paired it with an Italian seasoning grinder, garlic rock salt, and EVOO.

If you decide to try it let me know how it turns out or have a recipe of your own to share I'd love to try and make it!!

Enjoy, Amanda
