As I mentioned yesterday I want to pick one day of the week and dedicate it to food. I decide Thursday's will be that day.There are a few recipes that I'd really like to share but I'm going to start with my favorite: Shrimp Scampi. Jeremy and I made this Tuesday night and had a lot of good laughs in the process. He's a big fan of garlic... but really who eats whole cloves by themselves?? Personally, I like my garlic cooked.

This has got to be one of the easiest dishes to cook. I found this particular recipe on foodnetwork.com.

Ingredients:
  • 1 lb linguini
  • 4 tablespoons butter
  • 4 tablespoons extra-virgin olive oil
  • 2 shallots, finely diced
  • 2 cloves garlic, minced
  • pinch of red pepper flakes, optional
  • 1 lb shrimp, peeled and deveined
  • kosher salt and freshly ground black pepper
  • 1/2 cup dry white wine (plus the remainder of the bottle to drink with dinner!!)
  • juice of 1 lemon
  • 1/4 cup finely chopped parsley leaves

Directions:

For the pasta, follow the directions on the box.

Meanwhile, in a large skillet, melt two tablespoons butter in 2 tablespoons olive oil over medium-high heat. Saute the shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes.


Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes. Remove the shrimp from the pan; set aside and keep warm.

Add wine and lemon juice and bring to a boil. Add 2 tablespoons butter and 2 tablespoons oil. when the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta. Stir well and season with salt and pepper. Drizzle over a bit more olive oil and serve immediately.


Makes: 4ish Servings


And because pasta isn't complete without bread. I bought a loaf of french bread and paired it with an Italian seasoning grinder, garlic rock salt, and EVOO.
